Crock Pot Cheesy Chicken and Rice

This one is from
The pic is hers, too.
I LOVE her site.

This basically a crock pot
 version of chicken and rice.
Plus cheese.

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 large onion, chopped
  • 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
  • 1 cup cheddar cheese
  • 1 - 10.5 ounce can cream of chicken soup (regular or fat free)
  • 1 -15 ounce can whole kernel corn, drained
Instructions
  1. Place chicken in bottom of slow cooker. Scatter chopped onion over top. Spoon cream soup over top of that. Cover and cook on low 7-8 hours or on high 3-4 hours. A few minutes before serving, add in cooked rice, corn, and cheese. Stir to combine. Serve hot.

Two Timin Pasta Bake

Well, I'm slowly workin my way back after having my baby girl in December.
I predict a new recipe once a month, but don't quote me on that.

This pasta bake was just the thing to get me back in the saddle.
Easy and delicious.

1 box penne pasta
1 (15 oz) jar alfredo sauce
1 (24 oz) jar marinara sauce
2 cups shredded mozzarella cheese
1 cup shredded parmesan cheese

Cook pasta according to directions and drain.

Mix sauces together in a large bowl. Add the mozzarella and stir to combine.

Then add the cooked penne and toss to coat.

Pour pasta into 9x13 baking dish a cook at 350 for 20-25 minutes or until bubbly. Remove from oven, sprinkle with shredded parmesan cheese and bake for another 5 minutes.

Ta da! We paired it with some asparagus coated in olive oil, salt, pepper, and parmesan cheese that I baked at 350 for 10 minutes and it was also delicious.

Shepherd's Pie

This was surprisingly simple and good.
I just have to perfect my instant
mashed potato making skills.

1 lb ground beef, browned
1 can cream of chicken or mushroom soup (I actually used cream of celery and loved it)
12 oz frozen corn, or any veggie of your choice
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups mashed potatoes (I used the 4 servings from the instant)
1 cup shredded cheese

Mix browned meat with soup; season with salt, pepper, garlic powder and onion powder-or other seasonings to taste.

Layer meat mixture in bottom of 8x8 baking dish. Top with veggies.

Prepare mashed potatoes according to package directions. Spoon potatoes on top of veggies.

Sprinkle potatoes with cheese.

Bake at 350 for 25-30 min.

She also gives freezing directions:
After preparing Shepherd's Pie, do not bake. Instead, seal, label and freeze. To serve: Thaw in fridge, then bake as indicated above.

Lauren's Chicken Parmesean

this comes from the wonderful Lauren Opie
Here is the recipe she sent straight to me:

So this just might be my biggest secret in the kitchen ever. But my chicken parm is the yummiest, and probably one of the easiest things I make.
All you Need:
1 jar of your favorite spaghetti sauce. (This would be a good place for me to mention, it is so worth having a favorite jar of spaghetti sauce. Try every single one from the $1 a jar to the $8 a jar until you find one you love. I find the fewer ingredients the better. My personal fav is anything by Tuttorosso, but I'm afraid it may only be available regionally. It can often be found on sale for .99 a jar and it's the BEST!)
4 boneless skinless chicken breasts
Italian seasoned breadcrumbs
1 pkg mozzarella cheese
1 egg & a splash of milk
Enough olive oil to coat your pan
1 pkg whatever pasta you're diggin'

Mix egg and milk together. Dip chicken in egg/milk mixture. Then flop back and forth and coat it with bread crumbs. Heat oil in a skillet, and when it's hot (there's a neat little test you can do... flick a little drop of water into the pan of oil. If it jumps around and sizzles the oil is hot enough) throw in the breaded chicken. I usually start the pasta about now. Flip the chicken after maybe 7 minutes? Once it's looking nice and golden brown give them a flip. Then top each breast with a tablespoon of sauce, and sprinkle with cheese. Continue cooking until chicken is thoroughly cooked. Maybe another 7 minutes. Really depends on the thickness of your breasts. And I feel awkward using the word breast this many times in one paragraph, chicken's or not.

Drain spaghetti, add sauce, and top with remaining mozzarella cheese. YUM! Going to make this for dinner right now.

I can vouch for her that this was super yummy.

Loaded Baked Potato Soup

Oh man, this is the best soup I've ever made.
The accessories really make it what it is.
Which is excellent. And easy.

1 30oz bag frozen, shredded hash browns
3 14oz cans chicken broth
1 can cream of chicken soup
1/2 cup onion, chopped
1/4 tsp ground pepper
1 pkg cream cheese (don't use fat free, apparently it won't melt)

In the crock pot, combine everything except the cream cheese.

Cook for 6-8 hours on low.

About 1 hour before serving, add cream cheese and keep heated until fully melted.

Serve with cheese, bacon bits, sour cream, chives and anything else you think might be good.

Crock Pot BBQ Chicken

I haven't eaten this yet,
but I was so excited about it
I had to share it.

4-6 frozen boneless skinless chicken breasts (any recipe with frozen chicken is easily adaptable to thawed chicken)
1 bottle BBQ sauce
1/4 c vinegar
1 tsp red pepper flakes (if you don't have those, you can substitute Cayenne pepper cuz I guess it's the same thing)
1/4 c brown sugar
1/2-1 tsp garlic powder

Mix BBQ sauce with all ingredients listed under it.

Put chicken in crock pot.

Pour sauce over chicken.

Cook on LOW for 4-6 hours.

How easy was that?

Tater Tot Casserole

I'll probably double this the next time I make it.
It was super easy, though.

1 lb ground beef
1/2 onion, chopped
1 can cream of celery or cream of chicken soup (I prefer celery)
1 16 oz bag frozen tater tots
1 cup shredded cheddar cheese
salt and pepper

Preheat oven to 375.

Brown beef and season with salt and pepper. Add chopped onion; cook all together.

In casserole dish (a 9x9 worked best for me), mix beef and soup together. Top with tater tots.

Bake uncovered for 35 minutes.

Remove, top with cheese, cook 5 more minutes.

Tomato Basil Soup

Best tomato soup ever.

1 can tomato soup
1/2 soup can whipping cream
1/2 soup can milk
Basil

In pan, pour soup, whipping cream and milk. Sprinkle in some basil. Heat until done.

Great with grilled cheese.

It's probably not very healthy, but it is SO good.

Broccoli Chicken Casserole

I haven't made this in a while but I remember it being scrumptious.

3-4 boneless skinless chicken breasts
1 lb broccoli florets, cooked
1 can cream of mushroom soup
1 tbsp mayo
1 cup shredded cheddar cheese
1 cup dry stuffing mix

Preheat oven to 350.

Boil chicken then cut or shred into bite size pieces.
Meanwhile, cook broccoli until crisp but tender.

In a small bowl, mix together the soup and mayo. Set aside.

In a 9x13 baking dish, layer the chicken, broccoli, soup mixture, and cheese.
Sprinkle dry stuffing mix over top.

Bake for 25-30 minutes.

Crock Pot Ravioli

I made this tonight.
It wasn't wonderful, but it was filling.

1 (25 oz) bag frozen ravioli, cheese or meat
1 jar spaghetti sauce
1 cup mozzarella cheese

Put ravioli and sauce in crock pot.

Cook on high for 2 1/2 to 3 hours.

20 minutes before you serve, top with cheese, then finish cooking.

Once the cheese is melted, serve.

Grandma Angie's Applesauce Cookies

Grandma Angie is my great grandma
and was one awesome lady.

1/2 cup shortening
1 cup sugar
2 eggs
2 cups flour
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1 cup applesauce
1 cup chocolate chips

Bake at 375 for 10 minutes.

Audrey's Chocolate Chip Cookies

First, let me say: These are NOT easy.
I only make them a few times a year
because they are so labor intensive.
But, oh my goodness, are they worth the work.
They are from my best friend's mom, Audrey,
and I enjoyed them all growing up.
Also, Robby wants me to tell you that
everyone says they have the best
Chocolate Chip cookie recipe,
but this one is actually the best.

Preheat oven to 375.

1 cup butter flavor shortening
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla

Cream all these together.

2 1/3 cups flour
1 tsp baking soda
1 tsp salt

Mix these separately, then mix all together.

Add 2 cups Milk Chocolate chocolate chips (not semi-sweet). Mix.

Roll into balls. Bake for 8 minutes.

I promise you will not be disappointed.

15 Minute Rice and Taco Skillet

1 lb ground beef
1 package taco seasoning
2 cups water
2 cups instant white (or brown) rice, uncooked
1 cup shredded cheddar
Shredded lettuce
Diced tomatoes

Brown meat in large skillet; drain.

Add taco seasoning and water; bring to a boil.

Stir in rice; sprinkle with cheese; cover. Simmer on low heat for 5 minutes.

Top with lettuce and tomatoes right before serving.

SO easy. Serves about 4.

St. Valentine's Baked Ziti

Ok, this is more intense, especially for my standards,
so I usually buy the ingredients ahead of time
and wait for the mood to strike.
Also, it's St. Valentine's because that's the day I first made it.
My valentine loves his baked ziti.

1 lb dry ziti pasta
1/2-1 onion, chopped (I tend to use less onion generally)
1 lb ground beef
2 (26 oz) jars spaghetti sauce (I use Hunts cans, any flavor)
6-8 slices Provolone cheese
1 1/2 cups sour cream
6 oz shredded Mozzarella
2 tbsp grated Parmesan

Cook ziti in big pot (I add 1 tbsp Extra Virgin Olive Oil to keep the pasta from stickin together).

At the same time, brown the beef and onion in large skillet. Then add the spaghetti sauce and simmer for 15 minutes.

Preheat oven to 350. Spray 9x13 baking dish.

Layer ingredients in the dish as follows:
  • 1/2 of the ziti
  • slices of Provolone cheese, evenly layered
  • sour cream, evenly spread
  • 1/2 the sauce and beef mix
  • remaining ziti
  • 1/2 Mozzarella cheese
  • remaining sauce and beef mix
  • remaining Mozzarella cheese
  • Top with grated Parmesan
Bake for 30 minutes.

Crisp and Creamy Baked Chicken

One of my very favorites.

3-4 boneless skinless chicken breasts
1/2-1 pouch Shake'N'Bake (Extra Crispy is ideal, but you could probably use whatever you prefer)
2 cups uncooked instant rice (white or brown)
1 can cream of celery soup
1/4 cup milk
1 cup, approx, shredded cheddar cheese (or whatever you prefer)

Preheat oven to 400. Coat chicken in Shake'N'Bake as directed; place chicken in 9x9 baking dish.

Bake 20 minutes. Meanwhile, cook rice as directed on package.

Whisk soup and milk together until blended. Pour evenly over chicken; sprinkle with cheese.

Bake additional 5 minutes. Serve with rice.

Cream of Celery Chicken and Rice

I looove cream of celery.

1 can cream of celery (does NOT have to be low fat, it's just all I had for the picture)
1 1/3 cups water
3/4 cup uncooked rice (white or brown)
1/4 tsp black ground pepper
2-4 defrosted boneless skinless chicken breasts
Shredded cheddar (you could probably use any cheese you like)

Preheat oven to 375.

Mix soup, water, rice and pepper in a 9x13 baking dish.

Add chicken and coat each breast lightly in soup mixture. Cover with aluminum foil.

Cook 45 minutes.

Sprinkle shredded cheddar over chicken.

Cook 5 more minutes.

Crock Pot Mexi-Chicken

4-5 frozen boneless, skinless chicken breasts
1 can black beans
1 can Mexicorn (you can also use a can of regular corn)
1/2 jar salsa (it actually originally called for a full jar, but I'm not a salsa lover. Use what you like.)
6-8 oz cream cheese

Put frozen chicken, drained black beans, drained mexicorn and salsa in the crock pot.

Cook on low of 8 hours or high for 4-5 hours.

30 minutes before it's done, set the cream cheese on top and let it cook in.

When it's done, you can break up the chicken with a fork and stir it all together if you want to serve this over rice.

Taco Pizza

1 lb ground beef
1 envelope taco seasoning
2 (8 oz) cans Pillsbury crescent rolls
1 (16 oz) can refried beans
2-3 cups shredded cheddar or mexican blend
1/2 cup diced tomatoes (I used 3 medium sized ones)
1/4 cup sliced black olives, optional
4 green onions, chopped, optional

Heat oven to 375.

Brown beef and drain. Add taco seasoning and mix together.

Unroll crescent rolls into rectangles onto jelly roll pan (or a big cookie sheet, really). Press dough over bottom and 1/2 inch up sides to form crust. Bake for 11-13 minutes.

Microwave beans in microwave safe bowl. Spread over warm crust creating a thin layer.

Top with cooked beef, sprinkle with cheese followed by tomatoes, olives and green onions.

Return to oven for 3-6 minutes until cheese is melted.

Yum city!

Easy Pleasing Meatloaf

2 lbs ground beef
1 pkg (8 oz) stuffing mix for chicken
1 cup water
2 eggs, beaten
1/2 cup barbecue sauce, divided (I've also used ketchup when the ox is in the mire and it tastes just as good)

Preheat oven to 375.

Mix meat, stuffing, water, eggs and 1/4 cup barbecue sauce.

Shape meat into loaf; put into 9x13 or bread pan.

Cook for 60 minutes; top with remaining barbecue sauce.

I seriously love this meal.

Crock Pot Chicken and Dumplings

4-6 boneless skinless chicken breasts (chicken can be partially frozen)
2 tablespoons butter
2 cans cream of chicken soup
1 can approx chicken broth
1/2-1 onion, diced
1 tablespoon dried parsley
4 grands flaky refrigerator biscuits

Put chicken in crock pot. Add butter, cream of chicken soup, chicken broth, onions and parsley.

Cook on high 4-6 hours.
After cooking time, use a fork to break the chicken into pieces.

Cut each biscuit into 9 pieces., tic-tac-toe style. Stir pieces into crock pot and cook for 45 more minutes. Add more chicken broth as necessary.

I made this twice in one week. It was terrific.
